Everyone agrees the V60’s spiral ribs control flow. Nobody mentions that the ribs are just structural support, and the actual flow rate is determined by the paper’s thickness and chemical sizing. This is why your brew tastes different every time you switch brands, even when you use the exact same grind and ratio.
You buy a bag of beans, grind them to what worked last time, and pour exactly as you did before. The result is a cup that tastes flat or harsh, and you blame your technique. The problem is rarely your technique. It is the filter paper. The paper’s thickness dictates the flow rate. The flow rate dictates the extraction yield. When you change the paper brand, or even the box lot, you change the fundamental physics of the brew without realizing it.
What the Ribs Actually Do
The V60’s signature spiral ribs are often mistaken for a flow-control mechanism. They are not. Their sole purpose is to create a gap between the filter paper and the ceramic wall of the dripper. Without that gap, the wet paper would seal completely against the ceramic, creating a vacuum effect that stops water from draining. The ribs ensure there is always a channel for air to escape and water to flow through.
Think of the ribs as a structural support system, not a flow regulator. They keep the paper from collapsing. They do not dictate how fast the water moves. That is entirely up to the paper itself. The thickness of the paper, the density of the fibers, and the chemical sizing applied during manufacturing determine the flow rate. The ribs just make sure the paper doesn’t stick to the dripper.
Why Paper Thickness Matters More Than You Think
Filter paper is not a commodity. It is a precisely engineered component. Different brands use different thicknesses, fiber densities, and sizing agents. Some papers are coated with a thin layer of starch or clay to prevent coffee oils from soaking through and making the paper taste papery. This sizing creates a barrier that water must push through. Thicker paper with heavy sizing slows the flow. Thinner paper with light sizing speeds it up.
When you switch from Hario’s standard white paper to a natural brown paper, or to a third-party brand like Cafec or Kalita, you are changing the flow rate. You are not just changing the color. You are changing the extraction. A thicker paper will slow the brew, potentially leading to over-extraction if you do not adjust your grind. A thinner paper will speed it up, potentially leading to under-extraction. Most brewers do not account for this. They grind the same, pour the same, and wonder why the cup tastes different.
The solution is simple. Stop blaming your pour. Start measuring the paper. Use a refractometer to measure the Total Dissolved Solids (TDS) of your brew. Adjust your grind size to hit the target extraction yield, typically between 18% and 22%. If the paper is thick, grind finer. If the paper is thin, grind coarser. This is the only way to get consistent results across different paper brands.
How to Test Your Paper
You can test your filter paper at home with a simple flow test. Place the dry filter in the dripper. Pour 500 milliliters of water through it. Time how long it takes for the water to drain completely. A thick paper with heavy sizing will take longer than a thin paper with light sizing. Record the time. Do this for every brand of paper you use. This gives you a baseline flow rate for each paper.
Once you have the baseline, you can adjust your grind size accordingly. If the paper flows slowly, grind finer to increase extraction. If the paper flows quickly, grind coarser to decrease extraction. This is a much more reliable method than guessing based on visual cues. It removes the variability of the paper from the equation.
Another way to test is to brew a standard batch and measure the TDS. If the TDS is too high, the paper is likely too thick or the sizing is too heavy. If the TDS is too low, the paper is likely too thin. Adjust your grind size to hit the target TDS, typically between 1.2% and 1.4% for pour-over. This ensures you are extracting the right amount of solubles, regardless of the paper you use.
The Real Variable Is the Paper
The V60 is a simple tool. It does not have a valve, a pump, or a pressure gauge. It relies entirely on the interaction between the paper, the grind, and the water. Most brewers focus on the grind and the water, ignoring the paper. This is a mistake. The paper is the most variable component in the brew. It changes from box to box, from brand to brand, and even from lot to lot.
By acknowledging the paper’s role, you gain control over your brew. You stop guessing and start measuring. You stop blaming your technique and start adjusting your variables. This is the mark of a serious home brewer. It is about consistency. And consistency comes from understanding the real variables, not the assumed ones.
Next time you brew, look at the paper. Not the ribs. The paper. Notice its thickness. Notice its color. Notice how it behaves when wet. These are the details that matter. The ribs are just there to keep the paper from sticking. The paper does the work. Treat it with the respect it deserves, and your coffee will taste better.
