This happens because you are trying to force water through a puck that is physically incapable of holding pressure, and the machine is doing exactly what physics dictates.

When you overfill a basket, you are not just adding more coffee. You are breaking the fundamental geometry of the extraction chamber. A double basket is engineered to hold a specific volume of ground coffee, creating a flat bed at the bottom and a precise headspace above it. The shower screen can do its job, spreading the water out and forcing it to flow through the entire puck. This creates a uniform extraction, pulling the bright acids, the sweet sugars, and the bitter compounds in the correct balance.

This is the difference between a shot that tastes like chocolate and fruit, and a shot that tastes like burnt cardboard. It is about the physical geometry of the extraction chamber. When you respect the limits of your basket, you stop fighting physics and start brewing coffee.

How to Test Your Basket Capacity

Not all 14-gram baskets are created equal. Some hold 13 grams. Some hold 15. The only way to know for sure is to test your own gear. Fill your basket with coffee, tamp it, and look at the headspace. If the coffee bed is touching the shower screen, you are overfilled. If there is a visible gap between the coffee and the screen, you are underfilled.
